Thought I’d share one of my new favorite brownie recipes, full of chocolate chips, shredded zucchini, cinnamon and cardamom they are a wonderful spin on a childhood favorite.  They are still decadent and delicious but I feel a little less sinful since they are loaded with vegetables, contain no butter and use whole wheat pastry flour.  The next time you have a chocolate craving give these a try!  Click the link below for the full recipe and post.

Chocolate chip zucchini brownies 

Love creamy pasta sauces but not all the saturated fat and calories that come with most recipes?  If you love avocados and pasta then this is the dish for you.  

And while this dish is not exactly low in calories, it’s full of monounsaturated fat which in studies have found to lower cholesterol and it is thought to prevent inflammation.  Avocados are also loaded with 20 vitamins and minerals including vitamin E, vitamin C, folate, fiber, iron and potassium, plus they taste amazing.

This is a perfect weeknight dinner for when you want something on the table fast.   Avocado, paired with lime, garlic, basil makes for the richest, creamiest most delicious pasta ever.  Click the link below for the full post and recipe.

Creamy Avocado Pasta

I love using kale in my salads.  You need to work the dressing into the leaves a little bit more but it doesn’t wilt like most salad greens and does a great job of standing up to assertive ingredients.  I’ve made this salad many time since and the one addition I would highly recommend is some dices avocado, it makes for a more filling lunch and the creaminess of the avocado pairs nicely with the tartness of the grapefruit.

Grapefruit is high in enzymes that is thought to aid in weight loss as well as an excellent source of Vitamin C and antioxidents.  It is also believed to help lower cholesterol, treat common colds, improve liver function and boost immunity.  Health benefits aside, I have come to realize that there is so much more to grapefruit than cutting one in half and attacking it with a spoon.  Enjoy!

Kale, grapefruit and coconut salad

Happy Monday!  For those of you that don’t know,  I have another little home on the internet at Bliss and once a week I post a recipe for my friend Mrs. French.  I thought I’d start sharing my posts from Bliss here as well.  If you’ve never visited the site you should take a look around, it’s a lovely blog full of amazing photos and finds.

This sandwich features savory roasted broccolini with a spicy white bean spread, topped off with a sweet meyer lemon and fennel relish.  It’s very adaptable and all the components are delicious by themselves.  I can eat a bowl of roasted broccolini all by itself anytime but this really satisfies my craving for a big messy sandwich without weighing me down.  To make it vegan just omit the egg and if you need a gluten free option you can put all the components in a brown rice tortilla and make a wrap out of it.  Click on the link below for the full post and recipe

Hello there! I thought that I would start sharing some of the other posts that I do for my friend Mrs. French’s site Bliss. If you haven’t been to her site you really should visit, it’s full of beautiful photos and links to some amazing products.

Last week I made a malted chocolate cake for her birthday, it is the perfect cake for a special celebration. The cake is a chocolate cake layered with homemade malted milk crumbs and a malted chocolate frosting. It’s rich, moist, and the crunchy crumbs add great texture and crunch. Malted chocolate cake

I am not the biggest brownie lover in the world.  Most of the time I find them too rich, too sweet and just too much in general.  Then I baked a batch of these salted caramel brownies for a friends birthday and now I am counting the days until I can find the time and justify the extra calories to make a batch just for me.  The salted caramel really adds a complexity that elevates this into grown-up territory although my ten year old couldn’t get enough of them.  This is a recipe that I did for Blissful Eats but I love them so much I wanted to share them with you.  For the recipe and full post check it out on here on Bliss

Yes, I know I did a post on breakfast pasta but this is a recipe I did for the Bliss blog and let’s be real, you can never have too many recipes that call for bacon.  We regularly have pizza night in our house since that way everyone can have their pie just the way they like it.  Most nights we go for the traditional tomato sauce, pepperoni and if I’m lucky, swiss chard but we are developing a supreme attachment to this breakfast pizza.  Full of caramelized onions, bacon and a nice oozy egg on top it’s delicious.  For the full recipe click here, and make sure to look around and see what Mrs. French is up to, I’m sure it’s something wonderful.

I have this incredible friend.  Her name is Mrs. French, she is the most stylish person I know and she has this beautiful blog called Bliss.  I am so lucky that she has asked me to post on her wonderful site once a week and share my love of food with her readers.
